African Locust Bean/Iru

Iru is a key ingredient in many traditional West African dishes, including soups like egusi, okro, Ewedu, and ogbono, as well as stews, sauces, and bean dishes. Because of its very pungent smell, Iru may not be appealing initially but the magic lies in the taste.

Iru is made by fermenting the seeds of African locust beans (Parkia biglobosa). The seeds are fermented and then air dried. Iru has a strong smell, but its taste is pungently reminiscent of cheese, and its texture is thick and similar to chocolate.
